Cooking Class Reservation Cancellations

We respectfully request that should you need to cancel a reservation for one of our cooking classes, please do so as soon as possible. We almost always have a waiting list and your timely notice of cancellation provides time to contact those on the waiting list, hopefully in time for them to make arrangements to attend the class.

Our in-house and guest chefs usually purchase their food supplies at least the day prior to each scheduled class. Therefore we require that cancellations be made at least 24 hours prior to each class so that the instructor can adjust the food and supplies. Cancellations of less than 24 hours will result in a charge of 50% of the class cost to cover unnecessary supplies and food.

Class size is limited to provide the required separation distance…so our class size will be smaller. Make your reservations early!!

Paul once again will dip into his bag of memories from Canopies to provide a great culinary treat. We try to select 7 to 10 wines for each tasting, shifting our emphasis from whites to red as the cool weather starts to settle in. We specialize in great wines selling between $12 to $25, which we also believe taste better than their selling price. Always a great selection of hors d’oeuvres to cleanse our pallet. Chef Michael is leaving for Italy in mid-September and as many of you are aware, he is retiring from his great restaurant in downtown Panama City, Ferrucci’s. With plans still forming, this will be our last opportunity to have Chef Michael share his skill with, and love of food with us. We will miss him greatly so join us in his farewell presentation. Chef Diego was born in Venezuela and attended Culinary Arts School and has become a master of bread. Not only charming, he is a wonderful chef and instructor. This past month he presented his creation of. stuffed ham bread that was to die for. He is currently working on a couple of new breads inspired by Cuban and Caribbean recipes.

For those of you who have not had the wonderful pleasure of attending Bill’s classes, do not miss this opportunity. Chef Bill is a master at the unusual and different seafood presentation. Once you have attended one of his presentations you will not miss another! This class is most unusual as he will be exclusively using seafood to create a variety of appetizers! This class will be a bit more expensive due to the selection and use of all seafood, but we think you will be overwhelmed by the seafood excitement he creates.

From the kitchens of the family owned “Hotel Gerstle” located near the French/German border of Alsace Lorraine, you will learn how to create the classic Wiener Schnitzel served with Spaetzle and the popular Jaeger Schnitzel with red cabbage.
