Cooking Class Reservation Cancellations

We respectfully request that should you need to cancel a reservation for one of our cooking classes, please do so as soon as possible. We almost always have a waiting list and your timely notice of cancellation provides time to contact those on the waiting list, hopefully in time for them to make arrangements to attend the class.

Our in-house and guest chefs usually purchase their food supplies at least the day prior to each scheduled class. Therefore we require that cancellations be made at least 24 hours prior to each class so that the instructor can adjust the food and supplies. Cancellations of less than 24 hours will result in a charge of 50% of the class cost to cover unnecessary supplies and food.

Class size is limited to provide the required separation distance…so our class size will considerably smaller. Make your reservations early!!

Once more we celebrate the wonderful memories, we have of both the personality and culinary skill of Chef Eddie Cass. After relocating to Apalachicola from Ft. Lauderdale, Chef Eddie created an un paralleled reputation for unique and delightful morsels from the gulf. One of our favorites is Chef Eddie’s Scallops over Black Beans. You will just love this delightful combination together with one of his favorite salads and of course a desert using Florida lemons. He loved Florida citrus and especially lemons.

Wine Tasting

We try to select 7 to 10 wines for each tasting, shifting our emphasis from whites to red as the cool weather starts to settle in. We specialize in great wines selling between $12 to $25, which we also believe taste better than their selling price. Always a great selection of hors              d’Oeuvres to cleanse our “pallet.”

Great menu featuring Pollo en Nogada (Cinnamon almond chicken) with a Spanish flair (you can use almonds or Pepitas) and a wonderful almond sauce with a hint of chipotle peppers for heat & color. Also, some wonderful side dishes, such as Sopa de lime flour - creating a great refreshing summer soup with a picante lime flavor.
