Cooking Class Reservation Cancellations

We respectfully request that should you need to cancel a reservation for one of our cooking classes, please do so as soon as possible. We almost always have a waiting list and your timely notice of cancellation provides time to contact those on the waiting list, hopefully in time for them to make arrangements to attend the class.

Our in-house and guest chefs usually purchase their food supplies at least the day prior to each scheduled class. Therefore we require that cancellations be made at least 24 hours prior to each class so that the instructor can adjust the food and supplies. Cancellations of less than 24 hours will result in a charge of 50% of the class cost to cover unnecessary supplies and food.

Keith, who joined us as our new Pastry Chef is a graduate of the Gulf Coast College Culinary School, having studied under Chef Paul Ashman( currently on sabbatical to obtain a Master’s degree). Keith’s mother is Japanese and Keith has mastered much of the fabulous cuisine of Japan .Keith will demonstrate the secrets of Tempura presentations and feature Katsu don Chicken consisting of onion, chicken, soy, rice and spices. You will really enjoy Keith and this presentation!!

We try to select 7 to 10 wines for each tasting, shifting our emphasis from whites to red as the cool weather starts to settle in. We specialize in great wines selling between $12 to $25, which we also believe taste better than their selling price. Always a great selection of hors d’oeuvres to cleanse our “pallet.”

This Bouillabaisse recipe comes from Chef Roland of the Mongoose Café in Cruz Bay. It’s just the best I have seen anywhere!!! Filled with grouper, shrimp, lobster, clams, onions, potatoes and more, you will just love it too. An additional creation will be our own Shrimp Pate”, which I have been using since forever!

Introducing our new House Chef, Josh Hammes, who is a graduate of the Culinary Institute of North Carolina and who has worked as the protégé of Chef Paul Albrecht for almost 2 years. Along the way Chef Josh has been featured as a Sushi Chef and will create a variety of egg rolls, for which he received top prize in competitions. This is a “Hands On” class which will you provide you with the skills to create your own Sushi dishes.

Szegediner “Gulasch” & Spaetzle: $35.00

A 100% German meal! Starting with Champignon Salad and then followed by one of the signature dishes of the region of Germany where Hannelore’s family operated their hotel and restaurant for over a century. This is a dish with conflict as you can create it one of two ways; either with Sauerkraut or with a variety of roasted peppers, then served with Gulasch and spaetzli(homemade noodles). Hannelore does not do traditional German meals often so you best sign up early!

Jan has just returned from an extensive trip to Vietnam and Indochina. Jan attended Cookin School in Vietnam and has returned home with some truly wonderful recipes. Featuring a Chinese Lemon Chicken with Korean spinach and Thai Cucumber Salad. Her first class last month was fabulous so don’t miss this class.

Starting the evening off with our famous Champagne Kir Royale, served with an array of imported cheese and horsd’oeuvres. Then Gazpacho with Poblano Corn Relish for our appetizer followed by our main course of leek and mushroom stuffed tenderloin of beef with a great Madeira Sauce and our own “Grand Potatoes”. The “Coup de Grace” for the evening is Hannelore’s own favorite dessert, Black Forest Torte. Reserve early as seating is limited!
